The algorithms are identical to the latest "detail+" and "smooth" options in Iridient Developer 3.6. There are two interpolation options, one for a more detailed rendering and a second smoother, lower artifact version. The Iridient RAW processing routines have been in active development for over 15 years for use in Iridient Developer and have been optimized and refined over the years for the best possible image quality. The combination of the Fuji in-camera processing engine plus Iridient X Transformer performs edits of the raw data (sharpening, noise suppression, lens correction, and even a choice for how the raw demosaicing occurs. So now you have DNG files that limit what applications you can use.

Most applications provide only partial support if any, there are exceptions but they are limited. Why would you want to? Only Adobe provides full support for DNG files. You might reconsider deleting your raw files as once you delete them there is no going back. At some point Fuji may actually step up and produce a full raw converter/editor such as Canon's DPP and you no longer have the original raw files. Should an improved Iridient X Transformer, a better competing application, or an improved Fuji in-camera processor be introduced, they will only be useful with new images, you won't be able to take advantage of the improved capabilities with the older DNGs. The simplest solution is to go to Capture One but the least expensive solution may be to develop some presets that give you the look you are wanting. Unfortunately DxO PhotoLab does not support the X-Trans sensors at all, so DxO is not an option. To me, DxO often does a better raw conversion than Adobe. I think Capture One should be commended for the great job in setting up their presets for Fuji, but I'm not convinced that Lightroom (or ACR) could not produce the same by editing the presets. It seems to my eye, given the quality of the images I can see in the video, the main difference between the Lightroom image and the Capture One image seems to be that Capture One applies a mid-tone contrast where Lightroom does not.

But to say that no editing occurred is ignoring the presets that each software starts off with. I agree that Capture One presents a much nicer image than Lightroom.
